Everyone has a type of fungus (yeast) called Malassezia on their skin. It is natural and normally harmless. However, people with dandruff appear to have more Malassezia than usual. It feeds on the natural grease of the skin, from which it produces oleic acid. The oleic acid triggers increased turnover of skin cells, resulting in dandruff.
